Taste: full, sweet, reminescent of the pear jam, dense and cooked for a long time.

Vinification

It is produced only in particulary good years. Pressing is done in December. Grapes are destemmed and softly pressed. The fermentation is very slow and soft . The arrest of fermentation occurs naturally. Alcohol content and sugar residues vary depending on the year. Maturation for 18/24 months and refinement in the bottle for 8/12 months.
