Organoleptic Characteristics

Color: from intense ruby red to garnet.
Bouquet: spicy, overdone plum jam, lightly smoked, liquorice, nutmeg and ginger, dry leather and underbrush.
Taste: full, sweet, calls up old-fashioned jam, dense and cooked for a long time.

Vinification

It is produced only in particulary good years. Pressing is done in January. The fermentation is very slow and soft and the must remains in contact with the skins over thirty days. The arrest of fermentation occurs naturally. Alcohol content and sugar residues vary depending on the year. Maturation for 18/24 months and refinement in the bottle for 8/12 months.
