Serve cold 6 °C.
Crucial is the time of harvest to get the highest quality. The must is left to settle for 24 hours after a light pressing. Fermentation takes place at controlled temperature 17-18 °C and lasts about 15 days. The wine is then racked and stored in tanks at a temperature of 8 °C until the sparkling process.
