Organoleptic Characteristics

Colour: pale pink with purple highlights.
Foam: fine, persistent, continuous.
Smell: intense, delicate and well expressed integrity.

Vinification

Produced from red grapes of our production mainly merlot. The manual harvesting is done in mild advance to ensure maximum freshness and ideal alcohol content. Immediately after the harvesting is done gently pressed, the must is allowed to settle for 24 hours in order to separate the coarser turbid parts which are deposited in the bottom of the vessel and then removed. The fermentation is maintained at a temperature of 17-18 °C normally lasts 13-14 days, the wine is kept at 10 Celsius until the second fermentation.
